Papa J.J.'s Pimento Cheese
Oct 03, 23I’m done. This is my official pimento cheese recipe. This is the one I’m passing down.
- 1 lb. mild cheddar cheese, grated by hand
- 1 lb. colby jack cheese, grated by hand
- 2 1/2 cups of Bama mayonnaise
- 2 large jars of Lindsay pimentos, drained
- 1 tablespoon plus 1 teaspoon of sugar
- 1 tablespoon Hotter Texas Pete hot sauce
- 1 tablespoon Crystal with garlic hot sauce
- 1 tablespoon soy sauce
- 1 tablespoon onion powder
- 2 to 3 tablespoons fresh ground black pepper
Throw all of this into a bowl and mix the hell out of it. Refrigerate overnight for maximum enjoyment.
